Easy 30 Second Homemade Omega 3 Mayo!

Note: Always use pasteurized eggs. Most eggs sold in the U.S. are pasteurized. To pasteurize eggs at home, place them in a stove top pot full of water and have a digital thermometer handy. Turn on the heat and bring the water up to 140F. Keep the water temperature at 140F for 3 minutes (and no more than 142F), reducing the heat on the burner if necessary.

When you are following a ketogenic diet, mayo becomes your new best friend. I struggle to find a mayo, even organic versions, that do not have sugars added in, and preservatives. There is NOTHING like making your own fresh mayonnaise, and when it is this easy and quick, there is no reason not to!

An immersion/ hand held mixer is required for this recipe. 

Ingredients:

Oil (Olive Oil, Avocado Oil, Walnut Oil, Macadamia Nut Oil, etc) | 1 Cup

Egg | 1 whole

Lemon Juice | 1 tsp

Dijon Mustard | 1 tsp 

Sea Salt | pinch

Liquid Stevia | 1 drop

Directions:

Pour one cup of oil in a tall glass mason jar or tall container. I made this with an oil blend that I created of 1/2 cup of sesame oil and 1/2 cup of cold pressed flaxseed oil for a 1:1 balance of omega 6 to omega 3 essential fatty acids, with both linoleum acid and alpha-linolenic acid.

Add one egg and let it settle to the bottom. If desired, add 1 tsp of lemon juice, 1 tsp dijon mustard, sea salt and 1 drop stevia if desired. Lower the hand held immersion blender into the container and then start blending, not moving the blender at all for 20 seconds, then slowly move the blender up to the top until it is all blended. Transfer to a mason jar and refrigerate. Keeps for up to 5 days as it has no preservatives (other than sea salt & lemon).

I also like to make it with walnut oil for amazing omega 6:3 blend! It is essential to balance out the omega 6 to omega 3 ratio to get our essential fatty acids which leads to youthful, soft, supple skin and low inflammation in the body! The ideal ratio is 2:1-4:1 for omega 6 to 3. The average ratio in North America is 10:1 or even 20:1 and is linked to risk for diabetes, obesity, lack of weight loss, heart disease, eczema, dry skin and chronic inflammation. It also reduces the absorption of fat soluble vitamins A, D, E & K. We all need to up our omega 3s to balance the ratio! The best sources are found in walnuts, chia seeds, hemp seeds, flax seeds, pumpkin seeds, fenugreek or the oils of all of the above. I like to make mayo variationss with these oils as well as salad dressings!
