Easy One Minute Cinnamon & Walnut Mug Cakes

This is a SUPERFOOD mug cake!! It has flax meal and walnuts or walnut oil which provide us with your MUCH needed Omega 3 oil! Flax has about 10 times the omega 3 essential fatty acid of alpha-linolenic acid than cold water fish such as salmon, cod, carp, halibut, etc. 

It is SUCH a quick and fun recipe. There are tons of recipes online for these, I modified this one to make it lower carb, easier and also dairy free to be optimized for weight loss, but still with tons of flavor! I enjoyed mine with some delicious grass fed butter for some extra healthy fat, and tried it with my keto nutella and some almond butter too!

Easy One Minute Cinnamon & Walnut Mug Cakes

Yield: 2 Servings

Ingredients

Flax meal | 4 tablespoons

Coconut flour | 2 tablespoons

Swerve – optional (or 1 tsp liquid Stevia, a stevia and inulin blend, or your preferred sweetener) | 2 teaspoons

Organic Egg | 1

Coconut oil | 1 tablespoon

Walnut Oil (Or sub Chopped Walnuts if preferred) | 1 teaspoon

Cinnamon | 1/2 teaspoon

Baking Soda | 1/2 teaspoon

Sea Salt | pinch or to taste

Directions

Combine the dry ingredients in a small bowl. Add in the melted coconut oil and the egg to the mixture. Spray a microwave safe ramekin or mug with coconut oil and add the batter mixture. Put in the microwave on high for one minute and enjoy!
